beef enchiladas

Ingredients beef enchiladas


1 lb ground beef
1 small onion
1 can enchilada sauce
10 each 10" flour tortilla
2 cup Cheddar cheese
1 can black olives

how to make beef enchiladas


Preheat oven to 350°. In medium skillet over med high heat, cook the beef and chopped onion until the beef is evenly browned and onion is tender.


Pour 1/4 cup of enchilada sauce into the bottom of a 13x9 baking dish.


On each flour tortilla place an equal portion of the ground beef mixture, drizzle with enchilada sauce and top with 1oz cheeze. Reserving at least a 1/2 cup of cheese. Tightly roll tortillas and place seam side down in pan.


Pour the remaining sauce over the top of the enchiladas and sprinkle with the remaining cheese and sliced olives.


Bake in preheated oven for 20 minutes, or until sauce is bubbly and cheese is thoroughly melted.
