jacked up potatoes

Ingredients jacked up potatoes


3 lb Red skin potatoes cut up (skin left on)
4 tbsp Butter
1/2 cup Milk more or less to desired consistency
1 tsp Garlic powder
1/2 tsp Salt & pepper
4 oz Can of diced green chilies
6 oz Pepper jack cheese grated
1 each Smoked paprika optional topping

how to make jacked up potatoes


Boil the diced potatoes in salted water until they fall apart when pierced with a fork. 30 minutes or so.


Drain potatoes. Add milk, butter, and spices. Smash by hand or whip with a hand mixer.


Fold in the green chilies & cheese.


Top with a dusting I smoked paprika, if desired.


I served this with my chipotle chicken recipe and spooned the sauce over the potatoes! Yummmm
