Ingredients loaded mashed potatoes
5 lb Potatoes cut and peeled (you can leave skins on if desired)
1 cup Sour Cream
1/2 cup Milk
4 tbsp Butter
1/2 lb Bacon cooked and crumbled (you can also use about 5 oz. bacon bits if you are looking for simplicity)
3 Green Onions finely chopped
3 cup shredded cheddar cheese (I like to use sharp cheddar)
1 Salt and Pepper to taste ( I like to use a lot of both!)

Once the potatoes are chopped into like size pieces and peeled as desired, place in cold water and bring to boil. After about 10 minutes of boiling use a fork or knife to check if the potatoes are tender.
Drain potatoes and place in a large mixing bowl.
Add sour cream, milk, and butter to the potatoes . Mix with an electric mixer until potatoes are smooth and creamy.
Stir in chopped chives, 2 cups of cheese, and bacon. Add salt and pepper.
Layer the potato mixture in a 3 qt. Baking dish and top with the remaining cheese.
Bake uncovered in the oven for 30 minutes at 350°F.
