parmesan basil perch

Ingredients parmesan basil perch


4 tbsp dry breadcrumbs
4 tbsp grated parmesan cheese
2 tbsp chopped fresh basil leaves or 2 tsp dried basil leaves
1 tsp paprika
1 dash pepper
1 lb Ocean Perch fillets
2 tbsp margarine melted
1 tbsp chopped fresh parsley

how to make parmesan basil perch


Move oven rack to position slightly above middle of oven


Heat oven to 375°F. Spray rectangular pan, 13 x 9 x 2", with cooking spray.


Mix all ingredients except fish, margarine and parsley.


Brush both sides of fish with margarine, dip nto crumb mixture, coating both sides.


Place fish in pan.


Bake uncovered 15 t 20 minutes or until fish flakes easily with a fork.


Sprinkle with parsley.


Serve with a colourful and crunchy coleslaw.
