Ingredients pfchangs general tsos chicken
3 lb de-boned dark meat chicken cut into large chunks
1 tsp white pepper
3/4 cup sugar
1/4 cup rice wine
1/2 cup soy sauce
1/4 cup white vinegar
1 1/2 cup chicken broth hot
1 egg
1 cup corn starch
1 cup vegetable oil
2 cup diced scallions
16 small dried hot chilli peppers
sauce
1/2 cup corn starch
1/4 cup water
1 1/2 tsp minced garlic
1 1/2 tsp minced Ginger
how to make pfchangs general tsos chicken
for sauce: combine corn starch, garlic, Ginger, water, sugar, wine,vinegar, broth, stir until sugar dissolves, chill until needed.
in separate bowl combine chicken, soy sauce & pepper, stir in egg & corn starch until chicken is coated evenly. add veggie oil to help separate chicken into all qtys.
place chicken in deep fryer @350° ,until chicken is crispy, drain on paper towel.
add all amount of oil in wok,heat until oil is hot. add scallions & chilli peppers, stir fry briefly, stir sauce into wok,put chicken in sauce. cook until sauce thickens. add corn starch & water as needed
