Ingredients pumpkin whoopie pies
2 cup packed brown sugar
1 cup vegetable oil
2 eggs
3 cup all-purpose flour
1 tsp salt
1 tsp baking powder
1 tsp baking soda
1 tsp vanilla extract
1 tsp ground cinnamon
1 tsp pumpkin pie spice
1 egg whites
2 tbsp milk
1 tsp vanilla extract
2 cup powered sugar
3/4 cup shortening (I used crisco)
1 1/2 cup pumpkin

Preheat oven to 350°. Lightly grease cookie sheet or i used parchment paper.
Combine oil, br.sugar. Mix in pumpkin.Add the 2 eggs beating well. Add flour, salt, b.powder, b.soda, vanilla and spices.
Drop by heaping teaspoonful. ( I used small cookie dipper) onto cookie sheet. Bake 10 to 12 minutes. Just check for doneness..
Let them Cool. Make filling with last 5 ing. Beat egg white and mix with milk and vanilla. Add 1 cup p.sugar.mix well. Beat in shortening and remaining sugar. Beat until fluffy.( don't add pumpkin to this)..
Take 2 cookies for top and bottom. Put about 1 tbsp. Filling on one. Put other one on lighly press them together. You are done. Fill them all that way....
