very easy mushroom barley soup

Ingredients very easy mushroom barley soup


1/4 cup olive oil
1 cup chopped onion
3/4 cup diced carrots
1/2 cup chopped celery
1 tsp minced garlic
1 lb sliced fresh mushrooms
6 cup chicken broth
3/4 cup barley
1 salt/peppet to taste

how to make very easy mushroom barley soup


Heat oil in large soup pot over medium heat.


Add the onions, carrots, celery and garlic. Cook and stir until onions are transparent.


Stir in mushrooms and continue to cook for a few minutes.


Pour in chicken broth and barley. Bring to a boil, then reduce heat to low.


Cover and cook until tender, about 50 minutes. Season with salt and pepper.
