Ingredients brendasvegetable casserole
1 small onion diced small
1 tbsp minced garlic
1 large yellow squash halved & sliced thin
1 large zucchini squash halved & sliced thin
1 large yellow potato halved & sliced thin
1 small jar favorite marinara or spaghetti sauce (about 2 cups)
1 cup shredded Italian style cheese
1 olive oil for sauting

Preheat oven to 400°
Spray 2 quart casserole dish with Pam
Spread mixed vegetables in dish
Saute onion & garlic in small amount of olive oil till soft.
Spread garlic onion mixture over vegetables.
Salt & pepper to taste
Spread sauce over top, cover with foil and bake for 30 minutes.
Uncover and bake for another 15 minutes or until vegetables are fork tender.
Sprinkle with cheese and leave in oven turned off until cheese is lightly browned.
