Ingredients chocolate zucchini bread


4 cup zucchini grated (1 1/2 pounds)
2 1/2 cup all purpose flour
1/2 cup unsweetened cocoa
2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 1/2 cup granulated sugar
2 eggs
3/4 cup unsalted butter melted
1/2 tsp instant coffee
1/2 tsp almond extract

how to make chocolate zucchini bread


Place zucchini in sieve to drain while preparing remaining ingredients.


Preheat oven to 350°F. Grease two 9x5 loaf pans.


In a large bowl, whisk together flour, cocoa, baking soda, salt, and cinnamon.


In a separate bowl, beat together eggs and sugar until smooth. Add butter, coffee, and almond extract. Mix until well blended.


Mix the zucchini into the egg mixture. Add the flour one cup at a time, stirring in between additions.


Devide the batter equally into the two loaf pans. Work quickly to avoid over leavening. Place in the oven, and bake for 50 minutes, or when a skewer inserted into the center comes out clean.


Let cool in the pan for 5 minutes, then alow to cool completely on a wire rack.
