Ingredients cinnamon muffins
50 grams butter
3/4 cup milk
2 eggs beaten
2 1/4 cup AP Flour
4 tsp baking powder
1 tsp ground cinnamon
1 pinch salt
1/2 cup heaped brown sugar
6 tbsp white sugar for topping

Pre-heat Oven to 200°C. Grease a 12 hole muffin pan
Melt butter in a saucepan and allow to cool. Thereafter add the milk and eggs and mix together
Sift the flour, baking powder, cinnamon and salt in a large bowl. Stir in the brown sugar
Pour the egg mixture into the dry ingredients and stir until only just combined. Mixture should still be slightly lumpy
Spoon the mixture into the muffin pans and sprinkle with white sugar. (You may add more or less white sugar if you like. Once baked it gives the muffin a crispy topping which i just adore!)
Bake for 15-18 minutes until golden brown. Leave in pan for 5 minutes then transfer to wire rack to cool completely
