2 lb boneless leg of lamb
6 clove garlic
2 tbsp chopped fresh ginger
1/2 tsp cinnamon
1/4 tsp nutmeg
1 1/2 tsp salt
2 cup baby carrots
2 cup low sodium chicken broth
1 couscous or rice

Cut lamb into 1" pieces.


Combine garlic and ginger in food processor.


Mix in cinnamon, nutmeg and salt.


Rub down meat with spice mixture in large bowl. Marinate in fridge overnight or up to 24 hours.


Place lamb, carrots and chicken broth in crock pot for 7-9 hours on low.


Serve over couscous or rice. Garnish with fresh chopped parsely or cilantro if desired.
