quinoa salad

Ingredients quinoa salad


1 cup quinoa
2 cup water
1/4 cup olive oil (I use extra virgin)
2 limes juiced about 1/4 cup
2 tsp ground cumin
1/4 to 1/2 teaspoons crushed red pepper flakes
1 1/2 cup grape or cherry tomatoes
1/4 cup chopped fresh cilantro
1/4 to 1 teaspoon salt to taste ( I use 1/4 teaspoon)
1/4 to 1/2 teaspoon black pepper to taste
5 green onions finely chopped
1 (15 ounce can) black beans drained and rinsed (I used reduced sodium)

how to make quinoa salad


Bring quinoa and water to a boil in a saucepan.


Reduce heat, cover and simmer until tender and water has been absorbed, 10 to 15 minutes.


Set aside to cool.


Whisk together in a bowl the olive oil, lime juice, cumin and red pepper flakes.


Combine quinoa, tomatoes, black beans and green onions together in a large bowl.


Pour dressing of choice over quinoa mixture.


Toss to coat.


Stir in cilantro.


Season with salt and pepper if desired.


Serve immediately or chill in the refrigerator.
