Ingredients ragu alla bolognese
1/4 cup Extra Virgin Olive Oil
2 medium Onions finely chopped
4 stalk Celery finely chopped
2 medium Carrots scrubbed and grated
5 clove Garlic thinly sliced
1 lb Ground Beef
1 lb Ground Pork
1/4 lb Bacon finely chopped
1 can Tomato Paste
1 cup Milk
1 cup Dry White Wine
1 tsp Fresh Thyme picked
1 Salt and Pepper

Heat olive oil in a large, heavy saucepan over medium heat.
Add onion, celery, carrot, and garlic. Cook until translucent.
Add ground beef, ground pork, and bacon. Cook, while stirring, until meat is browned.
Add tomato paste, milk, wine, and thyme. Bring just to a simmer. Hold for 60-90 minutes.
Season with salt and pepper.
